Red beans
Soak beans in water for 6-7 hours and cook them on a low fire for the following 3 hours. Neatly chop some onions, cut the tomatoes in half and grate them. Pound some dried coriander, blue fenugreek, salt, ground pepper and garlic until they form a solid mass. Pour some sunflower oil on a pan and fry onions for few minutes adding white wine, grated tomatoes, pounded spices and continue with frying for 5-7 minutes, stir them up time after time. Thinly slice herbs (mint, coriander, savory, basil and scallion). and stir them thoroughly. The Dish is ready.
Lobio is served in clay pots accompanied with marinade and some fresh herbs.
